• unsalted butter 225g, softened
• light muscovado sugar 200g
• vanilla extract 1 tsp
• eggs 2, beaten
• plain flour 300g
• bicarbonate of soda 1 tsp
• milk chocolate chips 1 bag
• salted caramel 2/3 of a jar
What you will need to do:
~ heat the oven to 180C/fan 160C/gas 4. Line 2 solid baking sheets with baking parchment.
~ cream the butter and sugar with an electric whisk until light and fluffy. Mix the vanilla and eggs and add to the butter and sugar. Sift the flour, bicarbonate of soda and a pinch of salt into the butter mix and fold in. Add the chocolate chips and mix in.
~ drop rounded tbsps of mixture onto the baking sheets, leaving about 4cm between each cookie you might need to do this is batches. Get your salted caramel and dollop a tsp or so onto each cookie and mix it into the mixture slightly.
Bake for about 15 minutes until golden brown. Cool on the baking sheets and then store in an airtight box.
MAKES 30 LARGE COOKIES.
