Salted caramel brownies.

Hi. Last Wednesday's blog was going to be how to make salted caramel brownies but I'm doing it today instead because I couldn't get wifi in the hotel I was staying in.


Salted caramel brownies (serves 18)

What you will need:
Unsalted butter - 175g (and extra for greasing)
Dark chocolate - 250g
Golden caster sugar - 250g
3 eggs
Vanilla extract - 1 teaspoon
Plain flour - 150g
Milk chocolate chips - 200g
A jar of salted caramel


Recipe:

• Heat the oven to 180C/fan 160C/gas 4. Line the base and sides of a 30cm x 20cm x 3cm baking tin with baking parchment, then butter.

• Melt the butter and dark chocolate together either in a bowl set over a pan of simmering water or in the microwave on a low setting. Stir until smooth and then leave to cool a little.

• Whisk the sugar and eggs together with electric beaters until pale and thick. Mix in the vanilla and melted butter and chocolate. Sift the flour and fold into the batter with the chocolate chips. Pour half of the batter into the tin and evenly dollop the salted caramel over the mixture then pour the rest of the mixture over the top. Bake for 35 minutes. When you take the tray out of the oven there might be a few places where the salted caramel has leaked out a bit but that doesn't matter. 


• Cool in the tin then cut into squares and place on a plate big enough to fit them all on to. 
 These are my absolute favourite things to make/eat because you can't see the salted caramel on some pieces until when you bite into them and it all comes oozing out.
